Nope. You could assume.
Especially with SBR when the attacker has an equal number of escort as defending figs the air-battle can easily be done retroactively.
Scrambles are more complex. I usually go about it that if I assume no scramble, but the opponent on the contrary wanted to scramble, then the full battle will be re-rolled. A scramble decision should not be made with knowledge of dice, but based on a probability analysis.

It’s easy to go back to a saved game before the CM and do a specific battle that way, then adding the results to the original save by edit.
That’s why my stand is that the full battle would be re-rolled if you choose to scramble in conflict with the assumption. That means no rolled dice are valid and it’s a completely new battle. So if the scramble-choice was unsound, it still would be. It’s a possibility that the opponent would hope for better dice and demand a new battle including scrambled air, but such things are of no certainty. The risk of scrambling against horrible odds is that you likely lose more. That would be fully ok.
Assuming is just a way of speeding up the game. I use it quite a lot, but not if I’m uncertain of the opponents rational choice. And sometimes a scramble-decision is made out of desperation.

You misunderstand me. All other battle-outcomes would remain. Only the specific battle affected by the changed scramble-decision would be affected. So it’s quite feasible.
