We did those out of celtex model train layout material. It is available at hobby shops for $30.00 a sheet or at Home Depot for $3 a sheet, your choice. The continents and islands are attatched with a rubber-cement like material so you can remove the A&A set and place down a A&A Europe or a Civil War or whatever layout you want. And since the entire table is ocean you always have ocean where it should be.
